book club recipes for April

A few of the recipes I am making for tonight's meeting. We'll be picking a new book tonight for the month of May.

Basic Quiche

Ingredients:
4 eggs
2 cups half-and-half cream
1/8 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon ground nutmeg
6 oz cheese (use all one type or mix and match)
1 (9 inch) unbaked pie shell

Directions:
1. Preheat oven to 425 degrees F (220 degrees C).
2. In a large bowl, whisk together eggs and half-and-half. Season with salt, white pepper and nutmeg. Place shredded cheese in the pie shell. Pour egg mixture over cheese.
3. Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake for 25 minutes, or until crust is golden and filling is set. Allow to set 5 to 10 minutes before serving.


Szarlotka (Polish apple cake)

Crust:
3 cups flour
3 eggs
2 tblsp vanilla sugar
1 tsp baking powder
¾ cups margarine
1 cup sugar

Filling:
2 ½ lbs apples (grated with peels)
¾ cups sugar
2 tblsp bread crumbs
1 tblsp cinnamon

Directions:
For crust, mix together with hands, set aside.
For filling, mix together, set aside. Grease a 9X13 pan. Divide dough into 2 parts.
Thumb press 1 part onto bottom of pan. Drain apple mixture, spoon onto filling. Roll out other half of the dough, and place on top. Bake at 200˚C for 30-45 minutes or until golden brown.

  1. For quiche: I added asparagus tips, and very finely diced carrots, green onions and 1 tomato with the juice and seeds removed.
